6 ripe bananas (the spottier, the sweeter!)
240 g semi-sweet chocolate (chips or a bar, chopped)
Instructions
Create the Banana Base: Peel the bananas and place them in a bowl. Mash them thoroughly with a fork until you get a smooth puree. For an ultra-silky texture, you can blend them briefly or even press the puree through a fine-mesh strainer to remove any fibrous bits.
Melt the Chocolate: Melt the semi-sweet chocolate gently. You can do this in a double boiler or in the microwave in 30-second bursts, stirring each time until completely smooth. Let it cool for a minute.
Combine & Whip: Pour the melted chocolate into the banana puree. Using a whisk, mix vigorously for a minute or two until the mixture is completely uniform and has lightened slightly in color. This whipping action is key to the mousse’s airy texture.
Serve & Enjoy! Spoon the mousse immediately into glasses or bowls. Since it doesn’t need to set, you can dig in right away!
