Ingredients:
For the meatloaf:
* 1 1/2 lbs ground beef
* 1 cup breadcrumbs
* 1/2 cup milk
* 1 large egg
* 1/2 small onion, finely diced
* 2 cloves garlic, minced
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1 teaspoon Italian seasoning
* 1/2 cup ketchup
* 2 tablespoons Worcestershire sauce
For the topping:
* 1/3 cup ketchup
* 2 tablespoons brown sugar
* 1 tablespoon mustard
For the mashed potatoes:
* 2 lbs russet potatoes, peeled and cubed
* 1/2 cup milk or cream
* 4 tablespoons butter
* Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F (190°C). Grease a loaf pan or baking dish.
2. In a bowl, combine breadcrumbs and milk. Let soak for 1 minute.
3. Add ground beef, egg, onion, garlic, salt, pepper, Italian seasoning, ketchup, and Worcestershire sauce. Mix gently until just combined.
4. Shape into a loaf and place in the pan.
5. Mix topping ingredients and spread evenly over the meatloaf.
6. Bake uncovered for 55–60 minutes until cooked through. Rest 10 minutes before slicing.
7. Meanwhile, boil potatoes in salted water until fork-tender. Drain.
8. Mash potatoes with butter, milk, salt, and pepper until smooth and creamy.
9. Serve thick slices of meatloaf over mashed potatoes with extra sauce spooned on top.
