BBQ Chicken and Potato Skillet — One-Pan Comfort Dinner

  1. Cook the Potatoes: Heat olive oil in a large skillet over medium-high heat. Add diced potatoes, season with salt and pepper, and cook 10–12 minutes until golden and tender. Remove and set aside.

  2. Cook the Chicken: In the same skillet, add chicken chunks, season, and cook until browned and fully cooked.

  3. Add Aromatics & Sauce: Stir in chopped onion and garlic. Pour in BBQ sauce and mix well.

  4. Combine & Melt Cheese: Return the cooked potatoes to the skillet. Sprinkle shredded cheese on top, cover, and cook until melted and bubbly.

  5. Serve: Garnish with sliced green onions and serve hot.
