BEAN AND HAM HOCK SOUP

Serves 6–8

  • 1 meaty ham hock (or 2 smaller ones)

  • 1 pound (about 2 cups) dried white beans (navy, great northern, or cannellini)

  • 1 tablespoon olive oil or butter

  • 1 large onion, chopped

  • 2 carrots, diced

  • 2 celery stalks, chopped

  • 3 cloves garlic, minced

  • 8 cups water or low-sodium chicken broth

  • 1 bay leaf

  • 1 teaspoon dried thyme

  • Salt and black pepper, to taste

  • 2 tablespoons chopped fresh parsley (optional, for garnish)
