Buttery Pecan Snowball Cookies

🥄 Ingredients

      • 1 cup (2 sticks) unsalted  butter, softened
      • 1/2 cup  powdered sugar (plus more for rolling)
      • 1 teaspoon vanilla extract
      • 2 1/4 cups all-purpose  flour
      • 1/4 teaspoon salt
      • 1 cup finely chopped pecans (toasted for extra flavor)

👩‍🍳 Instructions

    1. Preheat & Prepare:
      Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    2. Cream the Butter & Sugar:
      In a large bowl, cream the softened butter with 1/2 cup of powdered sugar until light and fluffy. Mix in the vanilla extract.
    3. Mix Dry Ingredients:
      Stir in the flour and salt until combined. Fold in the chopped pecans. The dough will be a bit crumbly — that’s normal!
    4. Shape the Cookies:
      Scoop about 1 tablespoon of dough and roll it into a ball. Place on the prepared baking sheet, spacing them about 1 inch apart.
    5. Bake:
      Bake for 12–15 minutes, or until the bottoms are lightly golden. The tops should remain pale.
    6. Coat in Sugar:
      Let the cookies cool slightly (about 5 minutes), then roll them gently in powdered sugar while still warm. Place them on a wire rack to cool completely.
    7. Final Dusting:
      Once cooled, give the cookies one last roll or dusting of powdered sugar for that perfect snowball effect
