Cajun Blackened Catfish with Lemon Butter

  1. Prep the Fish: Rinse and pat dry the catfish fillets.

  2. Season: In a small bowl, combine paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper. Rub the spice blend evenly over both sides of the fillets.

  3. Cook: Heat butter in a cast-iron skillet over medium-high heat until smoking hot. Carefully place the fillets in the skillet. Cook for 3–4 minutes per side, until the spices form a dark crust and the fish flakes easily with a fork.

  4. Serve: Transfer to plates and serve immediately with lemon wedges, rice, or sautéed vegetables.
