Bring a pot of water to a boil. Place the cauliflower upside down in the boiling water and cook for 7–8 minutes (longer if you prefer a more tender texture). Remove and let cool for a few minutes.
Prepare the Cheese Mixture:
In a small bowl, combine mayonnaise, shredded cheese, salt, pepper, and paprika. Mix until smooth and well blended.
Top the Cauliflower:
Pat the cheese mixture evenly over the cauliflower using your hands or a spatula.
Bake:
Preheat the oven to 400°F (200°C). Place the cauliflower on a baking sheet and bake for about 20 minutes, or until the top is golden and bubbly.
Serve:
Remove from the oven and let cool slightly before slicing and serving.
