Set the oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
Prepare the Meatloaf Mixture:
In a large bowl, mix the ground chicken, breadcrumbs, Parmesan, mozzarella, egg, garlic, onion, Italian seasoning, salt, pepper, and parsley. Combine gently without overmixing.
Shape the Meatloaf:
Form the mixture into a loaf and place it in the prepared pan or on the baking sheet.
Make the Topping:
In a small bowl, mix Parmesan, breadcrumbs, melted butter, and garlic. Spread evenly over the top of the meatloaf.
Bake:
Bake for 35–40 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
Serve:
Let rest for 5 minutes before slicing. Garnish with fresh parsley if desired.
