In a large pot, sauté onion, garlic, carrots, and celery until slightly softened.
Add chicken broth, shredded chicken, and thyme. Bring to a boil.
Stir in noodles and cook until tender, about 8â10 minutes.
Season with salt and pepper. Garnish with fresh parsley before serving.
Club Sandwich:
Toast bread slices lightly.
Spread mayonnaise on one side of each slice.
Layer turkey/chicken, bacon, lettuce, and tomato between the slices.
Season with a pinch of salt and pepper.
Cut diagonally and secure with toothpicks if desired.
