Classic Southern Chicken Fried Steak with Creamy Gravy

1. Prepare the Steak:

  • Tenderize the steaks with a meat mallet if needed.

  • Season both sides with salt, pepper, and optional spices.

2. Bread the Steak:

  • Dredge each steak in flour, shaking off the excess.

  • Dip into a mixture of beaten eggs and buttermilk.

  • Coat again in flour or breadcrumbs, pressing gently to adhere.

3. Fry the Steak:

  • Heat oil in a skillet over medium-high heat (about 350°F / 175°C).

  • Fry steaks for 3–4 minutes per side, or until golden brown and crispy.

  • Remove steaks and drain on paper towels, keeping them warm.

4. Make the Gravy:

  • Pour off excess oil, leaving about 2 tablespoons in the pan.
