1. Prepare the Steak:
Tenderize the steaks with a meat mallet if needed.
Season both sides with salt, pepper, and optional spices.

Dredge each steak in flour, shaking off the excess.
Dip into a mixture of beaten eggs and buttermilk.
Coat again in flour or breadcrumbs, pressing gently to adhere.
3. Fry the Steak:
Heat oil in a skillet over medium-high heat (about 350°F / 175°C).
Fry steaks for 3–4 minutes per side, or until golden brown and crispy.
Remove steaks and drain on paper towels, keeping them warm.
4. Make the Gravy:
Pour off excess oil, leaving about 2 tablespoons in the pan.
Whisk in flour and cook for 1–2 minutes until lightly browned.
Gradually add milk, whisking constantly, until gravy thickens.
