Set oven to 350°F (175°C) and spray a loaf pan with cooking spray.
Mix the Batter:
In a medium bowl, beat eggs, applesauce, Greek yogurt, vanilla, and sugar substitute until smooth. Gently stir in flour until just combined. Fold in cranberries.
Prepare Cream Cheese Filling:
In a small bowl, beat together cream cheese, egg white, and sugar substitute until creamy and smooth.
Assemble the Loaf:
Pour half of the cranberry batter into the prepared loaf pan. Spread the cream cheese mixture evenly over the batter. Top with remaining batter and smooth the surface.
Bake:
Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
Optional Glaze:
Whisk powdered sugar substitute with almond milk or lemon juice and drizzle over the cooled loaf.
