Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Prepare Filling: In a bowl, combine shredded chicken, cream cheese, and ½ cup shredded cheese. Mix until smooth.
Assemble Enchiladas: Spoon the chicken mixture into each tortilla and roll tightly. Place the rolled tortillas seam-side down in the prepared baking dish.
Add Sauce and Cheese: Pour enchilada sauce over the top of the rolled tortillas. Sprinkle the remaining ½ cup of cheese evenly over the sauce.
Bake: Bake for 20–25 minutes, or until heated through and cheese is melted and bubbly.
Garnish and Serve: Sprinkle with chopped green onions or cilantro if desired. Serve hot.
