Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. If using an air fryer, preheat to 400°F (200°C).
Prepare the Potatoes:
In a large bowl, combine halved potatoes, minced garlic, olive oil, oregano, thyme, salt, and pepper. Toss until evenly coated.
Cook the Potatoes:
- Oven: Spread the potatoes in a single layer on the prepared baking sheet and bake 25–30 minutes, turning halfway through, until golden and crispy. 
- Air Fryer: Cook in a single layer for 20–25 minutes, shaking the basket halfway through, until crispy and golden. 
Garnish & Serve:
Remove from heat, sprinkle with chopped fresh parsley, and serve warm as a side dish or snack.
