Beat the eggs in a bowl with a pinch of salt and pepper.
Heat a skillet over medium heat with a little butter.
Pour in the eggs and cook, stirring gently, until just set but still soft and fluffy.
2. Assemble the Sandwich
Spread mayonnaise on one side of each bread slice.
Place the cooked eggs on one slice of bread.
Add slices of cheese on top of the eggs.
Close the sandwich with the second slice of bread, mayo side down.
3. Toast the Sandwich
In the same skillet, melt a little butter over medium heat.
Place the sandwich in the skillet and cook until golden brown, about 2–3 minutes per side, and the cheese is melted.
4. Serve
Slice in half and serve warm for maximum gooeyness.
