Season the Pork: Rub the pork generously with salt, pepper, smoked paprika, brown sugar, and chili powder.
Prepare the Slow Cooker: Place sliced onions and minced garlic in the bottom of the slow cooker. Lay the seasoned pork on top.
Add Liquids: Pour in apple cider vinegar and drizzle with barbecue sauce.
Cook: Cover and cook on Low for 8–10 hours or High for 4–5 hours, until the pork is fall-apart tender.
Shred and Serve: Remove the pork and shred with two forks. Mix with the sauce for extra flavor and serve on buns, in tacos, or alongside mashed potatoes or coleslaw.
