Peel and chop the beetroot into small cubes.
Wash and slice the green apple into chunks (keeping the peel on if desired).
Grate and chop the carrot into small pieces.
Add beetroot, apple, and carrot to a blender.
Pour in 2 cups of water and blend until smooth.
Strain if you prefer a lighter texture.
Serve over ice and sweeten with honey, if desired.
