In a large skillet over medium heat, sauté the diced onion until softened.
Add the ground beef and cook until browned, breaking it apart as it cooks.
Stir in taco seasoning and water. Simmer for 2–3 minutes until well combined and slightly thickened.
Assemble the Nachos:
Preheat oven to 375°F (190°C).
Spread a layer of tortilla chips on a baking sheet or oven-safe platter.
Evenly distribute half of the cooked beef, cheese, black beans, and corn over the chips.
Add another layer of chips, beef, and remaining cheese.
Bake:
Place in the oven and bake for 10–12 minutes until the cheese is fully melted and bubbly.
Add Fresh Toppings:
Remove from the oven and top with diced tomatoes, jalapeños, olives, and green onions.
Serve immediately with sour cream, guacamole, or salsa.
