- Preheat Oven: Preheat your oven to 400°F (200°C). 
- Prepare Chicken: Make horizontal cuts along each chicken breast, about 3/4 of the way through, careful not to cut all the way. 
- Make Filling: In a small bowl, mix together chopped spinach, sun-dried tomatoes, and shredded mozzarella cheese. 
- Stuff Chicken: Fill each cut in the chicken breasts with the spinach mixture. 
- Season and Oil: Place stuffed chicken in a baking dish and brush with olive oil. Season with garlic powder, paprika, salt, and pepper. 
- Bake: Bake for 25–30 minutes, until chicken is cooked through and cheese is melted and bubbly. 
- Garnish and Serve: Garnish with fresh basil before serving.
