Honey-Glazed Acorn Squash with Goat Cheese & Cranberry Drizzle: Fall on a Plate


Preheat your oven to 400°F (200°C).

  • Prepare the Squash:
    Brush the cut sides of the acorn squash with olive oil, drizzle with honey, and sprinkle with salt and cinnamon. Place squash cut-side down on a baking sheet lined with parchment paper.

  • Roast the Squash:
    Roast for 25–30 minutes, until the squash is tender and golden. Flip cut-side up for the last 5–10 minutes to caramelize slightly.

  • Prepare the Goat Cheese Filling:
    In a small bowl, mix soft goat cheese and cream cheese until smooth and creamy.

  • Assemble the Dish:
    Once the squash is roasted, remove from the oven and fill each half with the goat cheese mixture.

  • Add Cranberry Drizzle:
    Spoon cranberry sauce over the squash and cheese, letting it gently drizzle down the sides. Serve warm.
