Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
Cook the Mushrooms:
In the same skillet, melt butter. Add sliced mushrooms and cook until browned, about 5 minutes. Add garlic and sauté for 1 minute until fragrant.
Make the Creamy Sauce:
Reduce heat to medium. Stir in heavy cream, chicken broth, and Parmesan cheese. Add Italian seasoning and simmer for 3-4 minutes until the sauce thickens slightly.
Add Spinach and Chicken:
Stir in fresh spinach until wilted. Return the chicken breasts to the skillet, spooning sauce over them. Simmer for another 2-3 minutes, allowing flavors to combine.
