Prep and Cook Shrimp:
Preheat oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat.
Add shrimp and Cajun seasoning; cook until shrimp turn pink and opaque, about 3–4 minutes. Remove and set aside.
Make the Cheesy Sauce:
In the same skillet, sauté minced garlic for 1 minute until fragrant.
Pour in heavy cream and bring to a simmer.
Stir in cheddar and Parmesan cheese until fully melted and smooth.
Season with salt and black pepper to taste.
Combine and Bake:
Return shrimp to the skillet, stirring to coat them in the cheesy sauce.
Transfer mixture to a baking dish, spreading evenly.
Bake for 15–20 minutes, until top is golden brown and bubbly.
Remove from oven and let cool slightly. Garnish with parsley or chives.
