Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté for 2–3 minutes until fragrant and softened.
Cook the Ground Beef:
Add the ground beef, breaking it up with a spatula. Cook 5–7 minutes until fully browned. Drain excess fat if necessary.
Add Vegetables:
Stir in red bell pepper and zucchini. Cook 3–4 minutes until the vegetables begin to soften.
Add Tomatoes and Seasoning:
Add cherry tomatoes, oregano, smoked paprika, salt, and pepper. Cook 2–3 more minutes, allowing the tomatoes to release their juices and blend with the other ingredients.
Finish and Serve:
Remove from heat. Garnish with chopped parsley and crumbled feta cheese if desired. Serve hot.
