Mediterranean Spinach Pasta Salad with Creamy Feta and Sweet Cranberries

Ingredients:
12 oz rotini or bowtie pasta
4 cups fresh baby spinach
1/2 cup dried cranberries
3/4 cup crumbled feta cheese
1/4 cup red onion, finely chopped
1/4 cup toasted walnuts or pecans
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and black pepper to taste
Directions:
Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool completely.
In a large bowl, whisk together olive oil, red wine vinegar, honey, Dijon mustard, salt, and black pepper.
Add the cooled pasta to the bowl and toss gently to coat with the dressing.
Fold in spinach, cranberries, red onion, and toasted nuts.
Gently stir in feta cheese just before serving.
Taste and adjust seasoning as needed. Serve chilled or at room temperature.
