Mexican Taco Lasagna: Cheesy, Flavorful, and Perfectly Layered

  1. Preheat Oven & Prepare Dish:
    Preheat oven to 350°F (175°C) and spray a 9×9-inch baking dish with non-stick spray.

  2. Cook the Beef:
    In a large skillet over medium heat, crumble and cook the ground beef until fully browned. Drain excess grease.
    Add taco seasoning and water, cooking for 2 minutes until well combined.

  3. Mix the Cheese Filling:
    In a medium bowl, combine drained tomatoes, nacho cheese soup, sour cream, and the cooked beef. Stir until fully incorporated.

  4. Assemble the Lasagna:

    • Place 3 tortillas in the bottom of the prepared baking dish.

    • Spread 1/3 of the meat mixture over the tortillas.

    • Repeat layers, finishing with a top layer of tortillas.

    • Sprinkle grated cheddar cheese evenly over the top.

  5. Bake:
    Bake for 20 minutes, or until hot and the cheese is melted and bubbly.

  6. Serve:
    Slice and serve with optional guacamole, chopped cilantro, and extra sour cream for garnish.
