My Grandma’s Apple Strudel

  • Combine Dry Ingredients: In a large bowl, mix flour, salt, and sugar.
  • Cut in Shortening: Add shortening and blend until the mixture resembles coarse crumbs.
  • Add Liquid: Mix egg yolks with water to make 1 cup. Stir into the flour mixture to form a dough.
  • Divide: Split the dough into two equal portions—one for the base, one for the top.

Step 3: Assemble the Strudel

  • Roll Out Bottom Crust: Roll one portion to fit a 10×15-inch jelly roll pan. Press gently into the pan, covering the bottom and sides.
  • Add Filling: Spread the apple mixture evenly over the crust.

Step 4: Add the Top Crust

  • Roll Out Top Crust: Roll the second dough portion to fit over the filling.
  • Seal: Place over the apples and press edges to seal.

Step 5: Brush and Bake

  • Egg Wash: Beat the reserved egg white and brush over the top crust.
  • Vent: Cut a few small slits in the top to allow steam to escape.
  • Bake: Preheat oven to 350°F (175°C). Bake for 45–60 minutes, until golden and bubbly.

Step 6: Prepare and Add the Icing

  • Mix Icing: Combine powdered sugar, vanilla, and enough milk or cream to make a pourable glaze.
  • Drizzle: While the strudel is still warm, spread the icing over the top. Let it soak in for a sweet finish.
