Oven-Roasted Sausages with Onions (Easy Tray Bake)

Ingredients
- 8–10 sausages (pork, beef, chicken, or turkey)
- 4–5 large onions, peeled and cut into wedges
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika (sweet or smoked)
- 1 tsp dried thyme or rosemary
- Optional: 2 cloves garlic (sliced), 1 tsp mustard, splash of balsamic or vinegar
Instructions
- Preheat oven to 200°C / 400°F.
- Prepare onions: Toss onion wedges with olive oil, salt, pepper, paprika, and herbs in a large baking tray.
- Add sausages: Nestle sausages among the onions. (Optional: prick sausages lightly so fat renders.)
- Roast for 20 minutes, then turn sausages and stir onions.
- Finish roasting another 20–25 minutes until sausages are deeply browned and onions are soft and caramelized.
- Optional final 5 minutes: drizzle a little balsamic or add mustard dots for extra flavor.
Serving Ideas
- With crusty bread or mashed potatoes
- Over rice or couscous
- Inside a sandwich or baguette with mustard
- Add roasted potatoes or bell peppers to the same tray
Tips
- For extra caramelization, spread everything in a single layer (don’t overcrowd).
- If onions brown too fast, cover loosely with foil and uncover for the last 10 minutes.
