Heat olive oil in a skillet over medium heat.
Add onions and green peppers, sautéing until softened and slightly caramelized, about 5–7 minutes.
Cook the Steak:
Push the veggies to the side of the skillet.
Add the shaved steak, season with salt and pepper, and cook until browned, about 3–4 minutes, stirring frequently.
Combine:
Mix the cooked onions and peppers with the steak in the skillet.
Layer slices of cheese over the mixture, allowing it to melt.
Assemble the Sliders:
Slice the rolls in half and toast lightly if desired.
Spoon the steak and cheese mixture onto the bottom halves of the rolls.
Top with the remaining roll halves.
