Raclette-style mountain quiche: a tasty and hearty portion of mountain flavors

Instructions
1. Prepare the shortcrust pastry (if homemade)
Mix the flour, salt and butter until the mixture forms a sandy consistency.
Gradually add cold water until the mixture forms a smooth ball.
Cover the bag and refrigerate for 30 minutes.
2. Boil the potatoes
Boil the potatoes in salted water for 15–20 minutes. They should be soft but firm.
Peel them and cut them into slices.
3. Prepare the filling
Fry the bacon in a frying pan without oil until golden brown. Drain on paper towels.
Melt the butter in a frying pan and sauté the chopped onion until translucent and softened.

4. Prepare the Quiche Dough
In a bowl, whisk the eggs with the cream and milk.
Season with salt (in moderation), pepper and a pinch of nutmeg.

5. Assemble the Quiche
Preheat the oven to 180°C.
Roll out the pastry and line a greased pie dish.
Arrange the potatoes, bacon and onions.
Pour the quiche mixture over the top.
Sprinkle with raclette cheese slices or cubes.
