Savory Bacon-Wrapped Homestyle Meatloaf

  1. Preheat the oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

  2. Mix the meatloaf: In a large bowl, combine the ground beef (or beef and pork mixture), breadcrumbs, milk, egg, chopped onion, minced garlic, salt, black pepper, and oregano. Mix until all ingredients are well combined, but don’t overmix—just until everything holds together.

  3. Shape the loaf: Form the mixture into a loaf shape and place it on the prepared baking sheet.

  4. Wrap with bacon: Lay the bacon slices over the meatloaf, slightly overlapping each piece and tucking the ends underneath. For a more decorative finish, weave the bacon into a lattice pattern.

  5. Bake: Place the meatloaf in the preheated oven and bake for 45–50 minutes, or until the internal temperature reaches 160°F (71°C).

  6. Add the glaze: During the last 10 minutes of baking, brush the top with a mixture of ketchup and brown sugar. Return to the oven to caramelize the glaze.

  7. Rest and serve: Let the meatloaf rest for 5–10 minutes before slicing. Serve warm and enjoy!
