1. Prepare the Brisket
Start by removing the brisket from the refrigerator and letting it come to room temperature for about 30 minutes. This helps it cook more evenly. Pat the meat dry with paper towels and season generously with salt and pepper on both sides.

2. Sear the Brisket
In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the brisket, searing it on all sides until browned (about 4-5 minutes per side). This step develops a deep flavor and a beautiful crust. Remove the brisket from the skillet and set it aside.

3. Sauté the Onions and Garlic
