Heat olive oil in a pan over medium heat. Fry the beef strips until browned, then transfer them to the slow cooker.
2. Add Vegetables
Add chopped peppers, onion, mushrooms, and garlic on top of the beef in the slow cooker.
3. Prepare the Sauce
In a small bowl, mix the beef broth and soy sauce. Pour this mixture over the meat and vegetables.
4. Slow Cook
Cover and cook on low for 6–8 hours, until the beef is tender and the vegetables reach your preferred doneness.
5. Thicken the Sauce
About 30 minutes before serving, combine cornstarch and water into a smooth paste. Stir into the slow cooker to thicken the sauce.
6. Season and Garnish
Adjust salt and pepper to taste. Sprinkle with fresh parsley before serving.
