Smothered Beef Burritos

Ingredients
1 lb (450 g) ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 Tbsp homemade)
½ cup water
1 cup refried beans (optional but recommended)
Burritos
6 large flour tortillas
1½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Smothered Sauce
1½ cups red enchilada sauce (or beef gravy for a classic diner-style version)
½ cup sour cream
Extra cheese for topping
👩‍🍳 Instructions
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Cook beef & onion in a skillet over medium heat until browned; drain excess fat.
Add garlic, seasoning, and water; simmer 2–3 minutes. Stir in refried beans if using.
Assemble burritos: Spoon beef mixture and cheese onto tortillas, roll tightly, seam-side down in the dish.
Mix sauce: Combine enchilada sauce and sour cream. Pour over burritos.
Top with cheese and bake 20–25 minutes, until bubbly and golden.
Rest 5 minutes, then serve.

Top with shredded lettuce, diced tomatoes, avocado, or cilantro
Add jalapeños or hot sauce for heat
Serve with rice, beans, or a simple salad
