Spinach and Chicken Casserole


Preheat oven to 375°F (190°C) and lightly grease a casserole dish.

  • Cook Chicken:
    In a skillet, cook chicken breasts over medium heat until fully cooked. Remove from heat and shred or dice into bite-sized pieces.

  • Sauté Veggies:
    In the same skillet, sauté onion and garlic until softened. Add spinach and cook until wilted.

  • Combine Ingredients:
    In a mixing bowl, combine cooked chicken, sautéed spinach mixture, Greek yogurt (or sour cream), shredded cheese, salt, pepper, and a pinch of nutmeg. Mix well.

  • Assemble Casserole:
    Transfer the mixture to the prepared casserole dish. Sprinkle with additional cheese and breadcrumbs on top for a golden, crunchy finish.

  • Bake:
    Bake in the preheated oven for 25–30 minutes, or until the top is golden and the casserole is bubbly.

  • Serve:
    Let the casserole cool slightly before serving. Enjoy warm as a main course.
