Ingredients:
8 lamb cutlets (lamb chops)
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
3 tablespoons unsalted butter
4 cloves garlic, minced
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon fresh lemon juice
1 teaspoon fresh thyme leaves (or rosemary)
Chopped parsley, for garnish
Directions:
Pat the lamb cutlets dry and season generously with salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat.
Sear the lamb cutlets for 2–3 minutes per side until nicely browned. Remove and set aside.
Reduce heat to medium and add butter to the same skillet.
Stir in garlic and cook for 30 seconds until fragrant.
Add honey, soy sauce, lemon juice, and thyme, stirring to combine into a glossy sauce.
Return lamb cutlets to the pan and spoon sauce over them.
Cook for another 2–3 minutes, turning once, until the lamb is cooked to your liking and coated in the sauce.
Garnish with chopped parsley and serve immediately.
