- In a medium saucepan, combine sliced peaches, granulated sugar, brown sugar, lemon juice, a pinch of salt, and cinnamon (if using). 
- Cook over medium heat for 5–7 minutes until the peaches release some juice and the mixture becomes syrupy. 
- If you prefer a thicker filling, stir in 1 tablespoon of cornstarch dissolved in a little water and cook for another minute. Remove from heat. 
Step 2: Make the Batter
- Preheat the oven to 350°F (175°C). 
- In a mixing bowl, combine flour, baking powder, and a pinch of salt. 
- Gradually add milk, stirring until smooth. 
Step 3: Assemble the Cobbler
- Pour the melted butter into a greased 9×9-inch baking dish. 
- Pour the batter over the butter—it may seem thin, but that’s perfect! Do not stir. 
- Spoon the peach mixture evenly over the batter. 
Step 4: Bake
- Bake for 40–45 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean. 
- The cobbler will rise up around the peaches, creating a soft, cake-like crust with juicy fruit beneath. 
Step 5: Serve
- Let the cobbler cool slightly for a few minutes. 
- Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
