2 pounds (900g) potatoes, boiled and cooled
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon sugar
Salt and black pepper, to taste
2 boiled eggs, chopped
1/2 cup finely chopped celery
1/4 cup finely chopped red onion
Optional: chopped pickles, fresh parsley or dill, paprika for garnish
