Pat the pork chops dry with paper towels, then season both sides with salt and pepper.
Sear the Pork Chops:
Heat the oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes per side, until golden brown and cooked through (internal temperature should reach 145°F / 63°C). Remove the chops and set aside.
Make the Honey Garlic Sauce:
In the same skillet, melt the butter. Add the minced garlic and cook for 1–2 minutes, just until fragrant.
Add the Glaze Ingredients:
Stir in the honey, soy sauce, apple cider vinegar, and dried thyme or rosemary. Simmer for 2–3 minutes, allowing the sauce to thicken slightly.
Coat the Pork Chops:
Return the pork chops to the skillet, spooning the sauce over them. Let them cook for an additional 2–3 minutes, basting constantly so the glaze coats the meat beautifully.
Serve:
Plate the pork chops and drizzle the remaining honey garlic sauce over the top.
