Preheat your oven to 375°F (190°C).
Prepare Pan and Potatoes:
Slice new potatoes in half and place them in the center of a baking pan.
Drizzle lightly with olive oil and season with half of the salt, garlic powder, smoked paprika, pepper, and parsley.
Season Pork Chops:
Rub the pork chops with the remaining seasoning mixture.
Arrange pork chops around the potatoes in the pan.
Bake Covered:
Cover the pan with foil and bake for 1 hour.
Broil for Finish:
Remove foil and broil for 3–5 minutes, until the tops are golden and slightly crispy.
Serve:
Let rest for 5 minutes, then serve the pork chops alongside the flavorful potatoes.
