Pat the chicken breasts dry with paper towels.
In a small bowl, mix paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and black pepper.
Rub the spice mixture evenly over both sides of the chicken.
2. Cook the Chicken
Heat a cast-iron skillet over medium-high heat and add oil or butter.
Once the pan is hot, add the chicken breasts.
Cook 5–6 minutes per side, until blackened and the internal temperature reaches 165°F (75°C).
3. Rest and Serve
Remove the chicken from the skillet and let it rest for 3–5 minutes to retain juices.
Serve with rice, a fresh salad, or steamed vegetables.
