Wash thoroughly and cut each potato into four wedges. Peeling is optional.Arrange in Muffin Tin
Place one wedge per cup in a muffin tin to maximize crispiness and keep upright.Season
Top each wedge with:1 cube of butter
A pinch of crushed garlic
Salt and black pepper
Bake
Bake for 50 minutes.Add Cheese
About 10 minutes before baking is complete, sprinkle mozzarella on top and return to the oven until golden and bubbly.Serve
Let cool slightly before removing from the muffin tin. Garnish with fresh herbs if desired.
