Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare Vegetables: In a large bowl, combine zucchini, cherry tomatoes, red bell pepper, red onion, and minced garlic. Drizzle with olive oil, and season with oregano, basil, thyme, salt, and pepper. Toss to coat evenly.
Add Chicken: Add the bite-sized chicken pieces to the bowl and toss with the vegetables and seasoning until everything is well coated.
Bake: Transfer the mixture to a baking dish or sheet pan, spreading it out in a single layer. Bake for 25–30 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender.
Add Feta: Remove from oven and sprinkle crumbled feta cheese over the top. Return to the oven for 3–5 minutes to allow the cheese to slightly melt.
Garnish & Serve: Sprinkle with chopped fresh parsley before serving. Enjoy warm.
