- Preheat Oven and Prepare Pans: Preheat oven to 350°F (175°C). Grease 8–9 mini loaf pans or 4 regular loaf pans. 
- Blend Dry Ingredients: In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside. 
- Mix Wet Ingredients: In another bowl, cream shortening with sugar until fluffy. Add eggs and mix well. 
- Combine Wet and Dry: Alternately add the dry ingredients and pureed bananas into the egg mixture, mixing until just combined. (It doesn’t matter whether you start or end with the dry ingredients.) 
- Add Walnuts: Fold in chopped walnuts and mix gently. 
- Fill Pans: Pour batter into prepared pans, filling each about 3/4 full. 
- Bake: Bake mini loaves for 45 minutes or regular loaves for 1 hour, or until a toothpick inserted in the center comes out clean. 
- Cool and Serve: Let loaves cool slightly before removing from pans. Slice and enjoy!
