Classic Banana Nut Bread

  1. Preheat Oven and Prepare Pans: Preheat oven to 350°F (175°C). Grease 8–9 mini loaf pans or 4 regular loaf pans.

  2. Blend Dry Ingredients: In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside.

  3. Mix Wet Ingredients: In another bowl, cream shortening with sugar until fluffy. Add eggs and mix well.

  4. Combine Wet and Dry: Alternately add the dry ingredients and pureed bananas into the egg mixture, mixing until just combined. (It doesn’t matter whether you start or end with the dry ingredients.)

  5. Add Walnuts: Fold in chopped walnuts and mix gently.

  6. Fill Pans: Pour batter into prepared pans, filling each about 3/4 full.

  7. Bake: Bake mini loaves for 45 minutes or regular loaves for 1 hour, or until a toothpick inserted in the center comes out clean.

  8. Cool and Serve: Let loaves cool slightly before removing from pans. Slice and enjoy!
