Creamy Pumpkin Cheesecake Bars

  1. Preheat oven to 300°F (150°C).

  2. Line a 13×9-inch baking dish with parchment paper, leaving extra overhang for easy lifting.

  3. In a small bowl, mix graham cracker crumbs, sugar, and melted butter.

  4. Press firmly into the bottom of the pan.

2. Make the Filling

  1. In a medium bowl, beat cream cheese and sugar until smooth and fluffy.

  2. Add eggs and beat just until combined.

3. Layer the Bars

  1. Spread half of the cream cheese mixture evenly over the crust.

  2. To the remaining batter, add pumpkin purée and pumpkin pie spice; beat until just combined.

  3. Carefully spread the pumpkin layer over the plain cream cheese layer.

4. Bake and Chill

  1. Bake for 50 minutes, until set.

  2. Turn off oven, crack the door, and let cool inside for 1 hour.

  3. Transfer to the fridge and chill for at least 3 hours before slicing into bars.

  1. Lift bars from the pan using the parchment overhang.
