Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
Prepare Coatings:
In a shallow dish, combine bread crumbs, 1/2 cup Parmesan cheese, Italian seasoning, salt, and black pepper.
In another dish, beat the eggs with milk.
Place the flour in a third dish.
Coat the Chicken:
Dredge each chicken breast in flour, shaking off excess.
Dip into the egg mixture, then coat with the bread crumb mixture.
Sear the Chicken:
In a skillet, heat olive oil over medium-high heat.
Cook chicken breasts for 3–4 minutes per side, until golden brown.
Bake:
Transfer the seared chicken to the prepared baking dish.
Sprinkle the remaining Parmesan and mozzarella cheese evenly over the chicken.
Bake for 20–25 minutes, until chicken is cooked through (internal temperature of 165°F / 74°C) and the cheese is melted and bubbly.
