Crispy Cheesy Chicken Bake

  • Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.

  • Prepare Coatings:

    • In a shallow dish, combine bread crumbs, 1/2 cup Parmesan cheese, Italian seasoning, salt, and black pepper.

    • In another dish, beat the eggs with milk.

    • Place the flour in a third dish.

  • Coat the Chicken:

    • Dredge each chicken breast in flour, shaking off excess.

    • Dip into the egg mixture, then coat with the bread crumb mixture.

  • Sear the Chicken:

    • In a skillet, heat olive oil over medium-high heat.

    • Cook chicken breasts for 3–4 minutes per side, until golden brown.

  • Bake:

    • Transfer the seared chicken to the prepared baking dish.

    • Sprinkle the remaining Parmesan and mozzarella cheese evenly over the chicken.

    • Bake for 20–25 minutes, until chicken is cooked through (internal temperature of 165°F / 74°C) and the cheese is melted and bubbly.
