Prepare the Potatoes: Scrub potatoes clean and prick each a few times with a fork.
Season: Rub potatoes with olive oil and sprinkle with salt.
Cook: Place potatoes in the Crock Pot in a single layer. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until tender when pierced with a fork.
