- Pat pork chops dry with paper towels. 
- Mix salt, black pepper, garlic powder, and paprika. Rub evenly on both sides. 
- (Optional) Let chops rest at room temperature for 10–15 minutes for even cooking. 
Step 2: Sear the Pork Chops
- Heat oil in a large skillet over medium-high heat. 
- Sear pork chops 3–4 minutes per side until golden brown. 
- Transfer to a plate (they will finish cooking in the glaze). 
Step 3: Make the Glaze
- Reduce heat to medium in the same skillet. 
- Melt butter, then sauté garlic for 30 seconds. 
- Stir in brown sugar, soy sauce, vinegar, water, and Dijon mustard. 
- Cook 2–3 minutes until sugar dissolves and glaze thickens slightly. 
Step 4: Cook in the Glaze
- Return pork chops to the skillet. 
- Spoon glaze over the chops and cook 5–7 minutes, flipping once. 
- Cook until chops reach 145°F (63°C) internally and glaze is caramelized. 
Step 5: Rest & Serve
- Remove from heat and let rest 3–5 minutes. 
- Spoon extra glaze on top before serving.
