Season beef cubes with salt and pepper, then toss lightly in flour.
(Optional) Brown the beef in a skillet over medium-high heat for extra flavor.
2. Assemble in Crockpot
Transfer beef to the crockpot.
Add chopped potatoes, carrots, celery, onion, and garlic.
Stir in tomato paste, beef broth, thyme, bay leaves, and Worcestershire sauce if using.
3. Cook
Cover and cook on Low for 7–8 hours or High for 4–5 hours, until beef is tender and flavors meld.
4. Thicken (Optional)
Mix cornstarch with water and stir into stew during the last 30 minutes of cooking for a thicker broth.
5. Serve
Remove bay leaves and serve warm with crusty bread.
