Heat olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides, about 8–10 minutes. Remove from the pan and set aside.
Sauté the Vegetables:
In the same pan, add sliced bell peppers and onion. Sauté for 5–7 minutes until softened.
Season:
Sprinkle garlic powder, oregano, salt, and pepper over the vegetables. Stir to combine.
Combine and Finish Cooking:
Slice the sausages and return them to the pan with the peppers and onions. Cook another 5–7 minutes, allowing flavors to meld.
Serve:
Garnish with fresh basil or parsley if desired. Serve with crusty bread or hoagie rolls, or enjoy as is.
