Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare Eggplant: Slice the aubergines into 1/2-inch thick rounds. Arrange them on a baking tray lined with parchment paper.
Season: Brush each slice with olive oil and sprinkle with chopped garlic, dried oregano, salt, and pepper.
Add Topping: Sprinkle breadcrumbs over each slice. If using, add grated cheese on top.
Bake: Bake in the preheated oven for 20–25 minutes, or until the eggplant is tender and the topping is golden and crispy.
