Light & Fluffy Cool Whip Cookies

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.

  3. Add Wet Ingredients: Mix in the vanilla extract and Cool Whip until fully incorporated.

  4. Add Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients until a soft dough forms.

  5. Add Mix-Ins: If using, fold in sprinkles, chocolate chips, or nuts.

  6. Shape Cookies: Scoop dough with a spoon or cookie scoop and place onto the prepared baking sheet about 2 inches apart.

  7. Bake: Bake for 12–15 minutes, or until edges are lightly golden. The cookies will appear soft; allow them to firm as they cool.
